You all know and love the Lofthouse Cookies that sell in our local grocery stores for way too much money; and I mean WAY TOO MUCH money
What If, yes what it you could make them yourself for literally pennies and just moments of your time?
Really just moments and pennies!
First you are going to print out the Homemade Baking Mix instructions because that is exactly what you use to make Lofthouse Cookies.
Make up the baking mix because you can use it for so many different quick to make biscuits, pancakes, cookies and more. I double the recipe so I have plenty on hand for biscuits, cookies, and pancakes with No nasty chemicals.
Homemade Lofthouse Cookies
2 cups Baking Mix
2/3 cup White sugar
1/3 cup Milk
5 TBS Shortening
1 Egg
1 tsp Vanilla
Preheat oven to 350 degrees. Grease Baking Sheet. ( I used parchment paper, or use a SilPat) Mix all ingredients and spoon onto pan. Bake for 8-10 minutes and remove to cool.
Decorator White Frosting
1 cup Shortening
4 cups Confectioner's Sugar
4 TBS Milk
1 1/2 tsp Almond Extract
Combine all ingredients in a mixing bowl. Beat on low speed of electric mixer until well blended and very smooth.
Tips - I baked them for 10 minutes because I have a electric oven, and cookies seem to take longer to bake at this higher altitude.
Because I wanted to be able to make these cookies under any conditions as long as I had stored the appropriate ingredients, I used powdered milk and powdered eggs to make these cookies. You will be using your money providently when you make these simple cookies instead of buying them. I think they taste better than the store bought cookies because they are fresher and don't have unhealthy ingredients.
For perfectly shaped cookies you could use a cookie scoop, or a pastry bag with a large tip to pipe the dough onto the sheet.
I didn't have Almond Extract so I used Pure Homemade Vanilla Extract. I always have Vanilla Extract on hand so I chose to use that instead of purchasing Almond.
