In early spring we sing a rousing joyous song to the Apricot Tree. With Popcorn Popping on the Apricot Tree we anticipate jars of golden sweet candy. Today was the culmination of hoping, praying, and blessing the Apricot Tree ... Seven quart jars packed full of golden apricots. Our apricot tree has only been producing for three years. Each year we have been blessed with a bigger and better crop than the previous year.
The first year we had apricots we only had three pieces of fruit, and Tom scarfed them all down. Last year we had one basket of apricots, so we made fruit leather, and it was gone in two days. This year it was two baskets and enough to make seven quart jars.
Canning apricots is so easy. Now is the time to be on the lookout for Apricots. Many people don't want to be bothered with their apricot tree and so you will find ads on KSL and FreeCycle where people would be happy for you to come and pick their apricots just so they don't have to be bothered with them. You supply the time, labor, and boxes and you walk away with FREE fruit.
