The Church always uses #1 US Grade wheat, which is the best quality you can get. It has to be at least 13% protein and could be higher, depending on the wheat. However,
protein content is not the only factor they look for in choosing wheat. They also check for the density of the wheat, which makes a difference. Wheat can have a high protein content, yet make lousy bread if it doesn't have a high enough density. The Church's wheat has to weigh in at 60# per bushel, which is very good.

The Church has its own wheat farms which is where it obtains all of its red wheat. However, the Church has to go to the open market to get white wheat, just like all the other vendors.
